Recipe: Ikan bumbu Bali - Balinese spicy fish
Ikan bumbu Bali is a spicy Indonesian fish dish. As the name suggests this recipe has it's roots on the beautiful island of Bali.

Ingredients
- 600 g / 20 oz mackerel
- 2 cm / 1 inch turmeric
- ½ teaspoon salt
- 1 lime
- Salad oil
- 1 lemon grass, crushed
- 2 cups water
- 3 tablespoons kecap manis (sweet ketchup)
Sauce spices
- 10 shallots
- 3 cloves garlic
- 5 candlenuts
- 1 cm / ½ inch ginger
- 1 tablespoon tamarind juice
- Salt
- Sugar
Directions
- Grind all the sauce spices in the blender.
- Scrape the scales off and wash the mackerel, cut into appropriate pieces, marinade with salt, lime juice and turmeric for 10-20 minutes.
- Heat the oil in a frying pan, and fry the mackerel.
- Heat some oil in another pan, and fry the sauce spices and the lemon grass.
- Add water and kecap manis and bring to boil.
- Simmer to thicken the sauce stirring constantly.
- Put the fried mackerel with the sauce and simmer until the fish absorbs the sauce.
